Dunmore Cobbler
It’s not easy to find low alcohol (or low octane as they’re known in the industry) cocktails that are also complex and crowd pleasing. The Dunmore Cobbler accomplishes this through the sophistication of Lustau’s Amontillado sherry as the base spirit and the additions of blended scotch and homemade pineapple syrup to add body and depth. It is nothing less than spectacular; and best suited to the end of a summer day, just before dinner, while the barbeque is warming up.
Be sure to serve the drink in a narrow Collins glass as anything larger will end up half full. Amontillado sherry is presently available at the LCBO. It is very different than other sherries, so be wary of swapping one for another.
2 oz | Amontillado Sherry |
½ oz | Lemon |
½ oz | Blended Scotch |
3 dashes | Angostura |
1 oz | Pineapple Syrup |
1 | Pineapple Wedge |
Directions:
- Shake all ingredients except bitters with ice.
- Strain into a narrow Collins glass filled with crushed ice.
- Top with bitters and pineapple wedge. Do not stir.
