Salary Man

[March 26th, 2018] I first tried this odd but incredible cocktail at The Pacific Cocktail Haven (PCH) in San Francisco in February of 2018. The drink came served in a small wooden box. The bartender intentionally over poured the cocktail so that it flowed into the box holding the glass. Though I probably should have been able to figure all that out in advance, I didn’t, and felt like a bit of an idiot when I yelled “WHOA!” as it happened. Anyway, I don’t have any waterproof small Japanese boxes and you probably don’t either so I wouldn’t recommend intentionally spilling this drink.

Salary Man is essentially a nigori sake martini. I don’t normally like sake, and as such don’t normally order such drinks at bars. That said, PCH is no ordinary bar and I had a feeling I would like it that night. If you can’t find nigori sake, you can use a filtered junmai sake as well. The actual recipe calls for Enter’s black nigori sake if you can get your hands on it. The cocktail is low proof and crowd-friendly. Also, sake often comes in small, affordable bottles, meaning you don’t have to open a giant bottle of wine to make this drink. Enjoy!

Ingredients:

1 ½ oz Enter Black Sake
3/4 oz Dolin Blanc
1/8 oz Maraschino
1 Lemon Twist

Directions:

  1. Add ingredients and ice, stir and strain into a coupe.
  2. Garnish with lemon.
